Cooking in India

            After eating so much delicious Indian food in America, I was excited for some really amazing dishes in India! Well, the best food I had while I was there was cooked right at home. by Dev's mom.

          Though, we did eat at a few Dahbahs and had take out a few times because we were traveling around so much. The take out in Derabassi, while we were staying at Sundeep's house, was possibly my favorite. That night, we ate Daal, Aloo Gohbi, Butter Chicken and some various Pickles with our Roti. The Roti was terribly soft and leathery, but the dishes were full of flavor and deliciously spicy. The pickles had been picked up by Renee on her way back from Timber Trail, and they were delicious; possibly the only pickles I ate without getting sick on the whole trip.

          We spent the last week with Dev's family in Pune; and his mom cooked almost every meal. I tried so many new dishes, that I had not even heard of before. I'm going to list out the some great meals I learned for you.

Her homemade curd was incredible.. we ate it with every meal, and I never tired of it.
Indians use fenugreek (mirchi) in a lot of things, which we don't often find here; but I made sure to stock up when we got back.


  • Baingan Bharta 
    • An Eggplant dish - The Eggplant is cooked straight on the gas without a pan; then your scrape off the skin, and use the soft inside to make a veg dish; a little thicker than a curry.

  • Gobi Parantha - indian bread pancake/crepe like thing with cauliflower - flavorings onions, mirchi, garam masala and touch of garlic and ginger

  • Aloo Parantha - same with potata

  • Bhindi - veg dish made with okra and onions

  • Upma - cream of wheat like dish - made of suji/rava (wheat grains) with cilantro, green peas and coconut

  • Sabudana khichdi - a pearly starch from sago palm stems that makes a thick couscous like dish - they soften it overnight and make it with peanuts, chilis and yogurt

  • Mithi bread- indian sweet bread made with the skin of the milk - similar to french toast

  • Rajma - kidney bean curry made with onion tomato, chili, and cilantro
